1. Melt and heat 100 grams of starch, sugar and water to 60 degrees (heat the container in water), filter with gauze. At the same time, bring 250 grams of water to a boil and slowly pour it into the syrup dissolved by starch and granulated sugar, stirring constantly to make a thick starch paste.
2. Add 450 grams of remaining granulated sugar, add 1 gram of citric acid and stir continuously to dissolve it, put it into an aluminum pot to heat and boil, and stir with a spatula to avoid burning the pot, after 30-40 minutes until the water evaporates, no water steam (or use a chopstick, dip in some syrup, cool it in cold water, and form block).
3. Remove the pan from the heat, add 3-4 drops of bayberry or orange essence, add 2-3 drops of food coloring solution, stir well, pour into a wooden frame sprinkled with starch or on a cutting board, the height of the wooden frame is 1.5cm, cool and cut into 3 cm long squares with a knife.
